If freezing, freeze on the day of purchase and consume within 1 month. Defrost thoroughly in refrigerator before cooking and use within 24 hours. Once thawed do not refreeze.

Cooking Guidelines
Oven cook - From Ambient - Cooking times will vary with appliances. The following are guidelines only.
Remove all packaging and allow meat to come up to room temperature for 30 min. before cooking. Stuff with cloves of garlic and sprigs of rosemary, drizzle with a little olive oil and season with sea salt and cracked black pepper.
Cook in oven: 190°C, 170°C with fan, Gas 5. Cooking time: Medium: 25min per 500g+25min Extra Well Done: 30min per 500g+25min Extra
Preheat oven. Place the lamb on a roasting tray in the middle shelf of the oven and cook for time indicated. Allow the joint to rest for 10 min before carving. Carve thinly using a sharp knife.
Do not reheat.
