Air Fryer Garlic & Chilli Chips

Ingredients
1x bag Dunnes Stores Crunchy & Golden Crinkle Cut Frozen Chips 
4 tbsp mayonnaise
1 tbsp Sriracha sauce, plus extra for serving
1 tbsp fish sauce for the dipping sauce and 1 tsp to serve
1 lime
Small handful coriander leaves, finely chopped
1 red chilli, finely sliced 
5 cloves garlic, finely chopped
½ bunch coriander, roughly chopped 
50g peanuts, pounded in a pestle and mortar

For the dipping sauce:

  • 4 tbsp mayonnaise
  • 1 tbsp Sriracha sauce, plus extra for serving
  • 1 tbsp fish sauce
  • 1 lime
  • Small handful coriander leaves, finely chopped

To serve:

  • 1 red chilli, finely sliced
  • 5 cloves garlic, finely chopped
  • ½ bunch coriander, roughly chopped
  • 50g peanuts, pounded in a pestle and mortar
  • 1 tsp fish sauce

METHOD

  1. Preheat your air fryer to 200˚C.
  2. Add the frozen chips to the air fryer basket or tray and cook the chips for 10 minutes.
  3. After 10 minutes, carefully pull out the air fryer basket and give the chips a good shake.
  4. Cook for a further 5-10 minutes until the chips are crispy and cooked through.
  5. While the chips cook, prepare the dipping sauce. In a small bowl, mix together the mayonnaise, Sriracha, fish sauce, juice of half of the lime, and coriander.
  6. Once the chips are cooked, toss in a bowl with the fish sauce, garlic, chilli, and peanuts. Pour out onto a serving plate and drizzle with some extra sriracha, lime juice, coriander and with a bowl the sriracha dip.
