The Secret for a Perfect Pasta Cooking "Al Dente". For every 100 g of dry pasta, you need about 1 litre of water (preferably not hard water). Boil the water slowly. Add about 10 g of salt, pour in the pasta and turn up the stove, so that boiling is faster. Stir with a wooden utensil and let the pasta cook for the recommended time. When ready, add a cup of cold water and drain. Season to taste.
Preparation and Usage
For Rustichella's classic shapes, a Mediterranean Diet typical sauce with simple and healthy ingredients.
Ingredients: 500 g Rust's "classic shape" pasta, 500 g of Pear tomatoes of Abruzzo, 4 spoon of extra virgin olive oil, fresh basil, 1 clove of garlic, Grana or Parmesan cheese or Pecorino cheese, salt. Preparation: Slice the tomatoes and salt with coarse salt and let them drip for 10 minutes. In a large pan nicely golden the garlic, in extra virgin olive oil, and add the tomatoes. The nine minutes required for the pasta to cook would be
necessary to obtain your Mediterranean sauce. Saute the pasta in the sauce, add 6 leaves of fresh basil and sprinkle of Parmesan cheese or Pecorino, and... Enjoy your meal!
