Ingredients
1 head broccoli cut into florets
2 large handfuls fresh spinach
500g Fusili pasta
2 cloves roasted garlic
Black pepper to season
1 tbsp olive oil
Handful grated Emmental cheese (plus extra for serving)
1/4 cup water

  • 1 head broccoli cut into florets
  • 2 large handfuls fresh spinach
  • 500g Fusili pasta
  • 2 cloves roasted garlic
  • Black pepper to season
  • 1 tbsp olive oil
  • Handful grated Emmental cheese (plus extra for serving)
  • 1/4 cup water

METHOD

  1. Bring a pot of water to the boil, add the broccoli and cook with the lid off for 20 minutes. This keeps the broccoli vibrant and green. Add the spinach and cook for a minute. Remove from the pot and place into an ice bath which stops the greens from cooking further.
  2. Cook the pasta in the broccoli water until soft, drain and leave aside.
  3. Drain the broccoli and spinach and add to a blender along with the remaining ingredients and blend until smooth. Pour the pasta sauce into a pan and heat, then add in the pasta and sprinkle over a little cheese to serve.

Serves 2 adults and 2 children or 12 baby dinners
