Breakfast Bread Pudding

Ingredients
4 Chia Seed Bread Rolls
2 tbsp butter
2 red apples peeled and finely sliced
1 small handful dried cranberries
1 handful blueberries
1 tbsp milled chia seeds
170ml (3/4 cup) milk
2 eggs
Zest 1 lemon
170ml (3/4 cup) cottage cheese
1 tsp vanilla extract
1 tsp ground cinnamon
Serve with Greek Yogurt

INGREDIENTS
- 4 Chia Seed Bread Rolls
- 2 tbsp butter
- 2 red apples peeled and finely sliced
- 1 small handful dried cranberries
- 1 handful blueberries
- 1 tbsp milled chia seeds
- 170ml (3/4 cup) milk
- 2 eggs
- Zest 1 lemon
- 170ml (3/4 cup) cottage cheese
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- Serve with Greek Yogurt
METHOD
- Preheat oven to 180ºC/350ºF.
- Slice the bread rolls in half, then butter each one, cut into 4’s, then add to a baking tray with the sliced apples in-between each one.
- Sprinkle over the cranberries, blueberries and the chia seeds then set aside.
- Add the milk, eggs, lemon zest and cottage cheese to a blender and blend until smooth then pour over the bread and apple. Sprinkle over the cinnamon.
- When ready to cook, preheat oven and bake for 40 minutes or until golden brown.
- Serve with Greek yogurt for extra protein.
