Ingredients
4 Chia Seed Bread Rolls
2 tbsp butter
2 red apples peeled and finely sliced
1 small handful dried cranberries
1 handful blueberries
1 tbsp milled chia seeds
170ml (3/4 cup) milk
2 eggs
Zest 1 lemon
170ml (3/4 cup) cottage cheese
1 tsp vanilla extract
1 tsp ground cinnamon
Serve with Greek Yogurt

INGREDIENTS

  • 4 Chia Seed Bread Rolls
  • 2 tbsp butter
  • 2 red apples peeled and finely sliced
  • 1 small handful dried cranberries
  • 1 handful blueberries
  • 1 tbsp milled chia seeds
  • 170ml (3/4 cup) milk
  • 2 eggs
  • Zest 1 lemon
  • 170ml (3/4 cup) cottage cheese
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Serve with Greek Yogurt

METHOD

  1. Preheat oven to 180ºC/350ºF.
  2. Slice the bread rolls in half, then butter each one, cut into 4’s, then add to a baking tray with the sliced apples in-between each one.
  3. Sprinkle over the cranberries, blueberries and the chia seeds then set aside.
  4. Add the milk, eggs, lemon zest and cottage cheese to a blender and blend until smooth then pour over the bread and apple. Sprinkle over the cinnamon.
  5. When ready to cook, preheat oven and bake for 40 minutes or until golden brown.
  6. Serve with Greek yogurt for extra protein.
