White Chocolate, Cranberry & Pistachio Blondies

240g butter, softened
150g caster sugar
50g Golden Syrup
100g light brown sugar
2 eggs
Zest of 1 orange
260g plain flour
1 teaspoon baking powder
100g Dried Cranberries
100g White Chocolate Chips
100g Shelled Pistachio Nuts
50g frozen raspberries
Directions
You will need:
1 x 13.6 x 11 inch roaster tin
INGREDIENTS
- 240g butter, softened
- 150g caster sugar
- 50g Golden Syrup
- 100g light brown sugar
- 2 eggs
- Zest of 1 orange
- 260g plain flour
- 1 teaspoon baking powder
- 100g Dried Cranberries
- 100g White Chocolate Chips
- 100g Shelled Pistachio Nuts
- 50g frozen raspberries
METHOD
- Preheat the oven to 180ºC / 160ºC fan and grease and line the baking tin.
- Melt the butter, caster sugar, golden syrup and light brown sugar together in a large bowl set over a bain-marie. Once fully melted, remove the bowl from the heat and set aside to cool for 10 minutes.
- Add the egg and orange zest and combine thoroughly. Fold in flour, baking powder and salt then finally stir in most of the dried cranberries, white chocolate chips and pistachios.
- Spoon the mixture into the prepared tin and sprinkle over the remaining cranberries, white chocolate chips and pistachios then scatter over the frozen raspberries. Bake in the oven for 35 - 40 minutes. The blondies may look a bit under baked when you take them out of the oven but they will set further on cooling.
