Spicy Flatbread Omelette

Ingredients
1 garlic clove, finely sliced
150g cheddar cheese, grated
2 large eggs
1 flatbread
25g butter
Sriracha sauce, to drizzle
Small handful basil leaves
Black bean rayu, to serve
Sea salt

INGREDIENTS

  • 1 garlic clove, finely sliced
  • 150g cheddar cheese, grated
  • 2 large eggs
  • 1 flatbread
  • 25g butter
  • Sriracha sauce, to drizzle
  • Small handful basil leaves
  • Black bean rayu, to serve
  • Sea salt

METHOD

  1. Add the eggs to a bowl with a pinch of salt, whisk together using a fork and set aside.
  2. Lightly toast the flatbread over a naked flame or on a griddle pan.
  3. In a large non-stick frying pan over a medium heat, add the butter. Once the butter starts to foam, add the garlic. Fry for a minute before pouring in the egg. Allow the egg to spread out and reach all sides of the pan. Before the egg sets, add in half the cheese and place a flat bread on top.
  4. Cook for a further minute before flipping and adding the remaining cheese with a drizzle of sriracha sauce and a few basil leaves.
  5. Take off the heat and serve with black bean rayu to your taste.
