Spiced Christmas Decoration Cookies

Ingredients
100g of muscovado sugar
150g of butter
1 large free range egg
350g of plain flour
1 tsp of baking powder
A pinch of salt
1 tbsp of mixed spice
1 tsp of vanilla extract
1 pack of foxes fruits or jolly ranchers
Directions

- 100g Muscovado Sugar
- 150g Butter
- 1 Large Free-Range Egg
- 350g Plain Flour
- 1 Tsp Baking Powder
- A Pinch of Salt
- 1 Tbsp Mixed Spice
- 1 Tsp Vanilla Extract
- 1 Pack of Foxes Fruits or Jolly Ranchers
METHOD
- Preheat the oven to 180°C / fan 160°C / Gas Mark 4 and line a baking tray with parchment paper.
- In a stand mixer, beat together the butter and sugar until light and fluffy. Add in the egg and mix well.
- Stir in the flour, baking powder, salt, mixed spice and vanilla extract until a biscuit dough forms.
- Turn the dough onto a floured surface and roll out to about 1cm thick.
- Cut out biscuit shapes and place them on the lined tray. Using a smaller cutter or knife, cut out the centre of each cookie.
- Crush the sweets with a rolling pin (not too fine) and place the pieces into the centre of each cookie. Bake for 15 minutes.
- As soon as they come out of the oven, use a straw or piping nozzle to poke a small hole at the top of each cookie. Allow to cool fully on a wire rack.
- Thread through ribbon and hang your festive cookies on the Christmas tree.
