Scandi Style Salmon Blinis

1 tub sour cream
100g cream cheese
1 lemon, zested and lemon wedges to serve
½ small bunch dill, finely chopped, plus extra to garnish
Freshly ground black pepper
200g whiskey smoked salmon
20 cocktail blinis
1 red onion, very finely sliced
1 tub Goatsbridge trout roe, optional

- 1 tub sour cream
- 100g cream cheese
- 1 lemon, zested
- ½ small bunch dill, finely chopped, plus extra to garnish
- Freshly ground black pepper
- 200g whiskey smoked salmon
- 20 cocktail blinis
- 1 red onion, very finely sliced
- 1 tub Goatsbridge trout roe, optional
- Lemon wedges, to serve
METHOD
- In a bowl, beat together the sour cream, cream cheese, lemon zest, most of the dill and some black pepper.
- Separate the salmon into small strips.
- Spread a little of the cream cheese mixture on to each blini and top with a bundled-up strip of smoked salmon and some of the remaining herbs.
- Sprinkle over the sliced red onion and add a little of the trout roe, if using, then serve with lemon wedges to squeeze over.
