Ingredients
1 tub sour cream
100g cream cheese
1 lemon, zested and lemon wedges to serve
½ small bunch dill, finely chopped, plus extra to garnish
Freshly ground black pepper
200g whiskey smoked salmon
20 cocktail blinis
1 red onion, very finely sliced
1 tub Goatsbridge trout roe, optional
Directions

INGREDIENTS

  • 1 tub sour cream
  • 100g cream cheese
  • 1 lemon, zested
  • ½ small bunch dill, finely chopped, plus extra to garnish
  • Freshly ground black pepper
  • 200g whiskey smoked salmon
  • 20 cocktail blinis
  • 1 red onion, very finely sliced
  • 1 tub Goatsbridge trout roe, optional
  • Lemon wedges, to serve

METHOD

  1. In a bowl, beat together the sour cream, cream cheese, lemon zest, most of the dill and some black pepper.
  2. Separate the salmon into small strips.
  3. Spread a little of the cream cheese mixture on to each blini and top with a bundled-up strip of smoked salmon and some of the remaining herbs.
  4. Sprinkle over the sliced red onion and add a little of the trout roe, if using, then serve with lemon wedges to squeeze over.
