Christmas Granola Jars

Ingredients
2 cups oats
1 cup pumpkin seeds
1 cup sunflower seeds
2 tsp ground cinnamon
1 tsp ground ginger
2/3 cup coconut oil
1/2 cup maple syrup
1/3 cup smooth peanut butter

INGREDIENTS
- 2 cups oats
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 2/3 cup coconut oil
- 1/2 cup maple syrup
- 1/3 cup smooth peanut butter
METHOD
- Pre-heat oven to 180ºC/350ºF.
- Add the dry ingredients to a baking sheet lined with parchment paper.
- In a bowl mix together the coconut oil, maple syrup and peanut butter until smooth. Pour over the oats and stir using a spatula until the oats are completely coated. Press down to flatten the mixture, then bake for 20 minutes.
- Remove from the oven when golden brown and leave to cool fully before stirring. This will help to turn the granola into clusters.
- Store in a jar, then decorate with a ribbon and gift tag.
Aileen's Top Tip: If serving granola as a toddler snack, grind using a pestle and mortar until fine, then stir through yogurt.
