Ingredients
2 cups flour
1/3 cup coconut sugar
1 tsp baking powder
2 eggs
1/3 cup olive oil
1 tsp vanilla extract
1 dessertspoon cocoa powder
Directions

INGREDIENTS

  • 2 cups flour

  • 1 tsp baking powder
  • 2 eggs

METHOD

  1. Pre-heat oven to 180ºC/350ºF.
  2. In a bowl, mix together the flour, coconut sugar and baking powder. In a small bowl, add the eggs, oil and vanilla and whisk until fully combined.
  3. Pour the wet mixture into the flour and stir well until it comes together into a dough. Divide into two equal parts leaving one part in the bowl, where you are going to add the cocoa powder and mix until chocolatey.
  4. Roll the light and the dark pastry into long sausage shapes, then intertwine and roll again. Cut into fingers then shape into candy canes.
  5. Bake for 12 minutes or 15 if baking from frozen.

 

Notes: These little cookies are so easy and great to bake with your kids. Shape them into little candy canes and then freeze with a little parchment paper in-between each layer to prevent them from sticking. You can then pop them straight from frozen into the oven. So easy and such a great way to save time.
