Ingredients
1.5kg potatoes
2 tbsp butter
2 tbsp flour
1/2 tsp nutmeg
2 tsp garlic granules
Black pepper
430ml (1 3/4) Milk
180ml (3/4 cup) cream
100g (1 cup) grated mozzarella
50g (1/2 cup) grated red cheddar
Finely chopped parsley to serve
Directions

INGREDIENTS

  • 1.5kg potatoes
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 tsp nutmeg
  • 2 tsp garlic granules
  • Black pepper
  • 430ml (1 3/4) milk
  • 180ml (3/4 cup) cream
  • 100g (1 cup) grated mozzarella
  • 50g (1/2 cup) grated red cheddar
  • Finely chopped parsley to serve

METHOD

  1. ⁠Pre-heat oven to 180ºC/350ºF.
  2. Finely slice potatoes, then cut in half and layer around a pie dish until fully covered.
  3. Melt butter in a pan over a medium heat, then add the flour, nutmeg, garlic granules and pepper and stir well to form a roux. Cook for about one minute, then gradually whisk in the milk and cream until it turns into a smooth sauce.
  4. ⁠Add the cheese and keep stirring until it is fully melted. This takes about 5 minutes for the mozzarella to turn really smooth and creamy…so don’t give up.
  5. Pour over the sliced potatoes and bake for around 50 minutes to one hour. The potato should be lovely and soft.
  6. Serve with a sprinkle of freshly chopped parsley.
