Baby Friendly Potato Gratin

Ingredients
1.5kg potatoes
2 tbsp butter
2 tbsp flour
1/2 tsp nutmeg
2 tsp garlic granules
Black pepper
430ml (1 3/4) Milk
180ml (3/4 cup) cream
100g (1 cup) grated mozzarella
50g (1/2 cup) grated red cheddar
Finely chopped parsley to serve
Directions
INGREDIENTS
- 1.5kg potatoes
- 2 tbsp butter
- 2 tbsp flour
- 1/2 tsp nutmeg
- 2 tsp garlic granules
- Black pepper
- 430ml (1 3/4) milk
- 180ml (3/4 cup) cream
- 100g (1 cup) grated mozzarella
- 50g (1/2 cup) grated red cheddar
- Finely chopped parsley to serve
METHOD
- Pre-heat oven to 180ºC/350ºF.
- Finely slice potatoes, then cut in half and layer around a pie dish until fully covered.
- Melt butter in a pan over a medium heat, then add the flour, nutmeg, garlic granules and pepper and stir well to form a roux. Cook for about one minute, then gradually whisk in the milk and cream until it turns into a smooth sauce.
- Add the cheese and keep stirring until it is fully melted. This takes about 5 minutes for the mozzarella to turn really smooth and creamy…so don’t give up.
- Pour over the sliced potatoes and bake for around 50 minutes to one hour. The potato should be lovely and soft.
- Serve with a sprinkle of freshly chopped parsley.
