4 Dunnes Stores Skinless Hake Fillets 400g
60g Dunnes Stores breadcrumbs
10g fresh dill - chopped
10g fresh parsley – chopped
50g soft butter
1 pack Dunnes Stores Frozen Sweet Potato Fries
1 bag Dunnes Stores Freshly Frozen Petit Pois
5 leaves of fresh mint
Salt
Pepper

Directions

INGREDIENTS

  • 4 Dunnes Stores Skinless Hake Fillets 400g
  • 60g Dunnes Stores Breadcrumbs
  • 10g fresh dill - chopped
  • 10g fresh parsley – chopped
  • 50g soft butter
  • 1 pack Dunnes Stores Frozen Sweet Potato Fries
  • 1 bag Dunnes Stores Freshly Frozen Petit Pois
  • 5 leaves of fresh mint
  • Salt
  • Pepper
  • Dunnes Stores Real Mayonnaise

 

METHOD

  1. Heat oven to 220c
  2. Bake sweet potato fries - as per packet instructions, one handful per person.
  3. Season hake with salt & pepper.
  4. Mix the butter, breadcrumbs and chopped herbs by hand, divide it by spooning it equally onto the fish
  5. Bake for 15 minutes or until the fish is fully cooked.
  6. Boil peas with 5 mint leaves for 4 minutes, drain and blitz with a hand blender
  7. Serve with Dunnes Stores Real Mayonnaise
