Ingredients
240g butter, softened
150g caster sugar
50g Golden Syrup
100g light brown sugar
2 eggs
Zest of 1 orange
260g plain flour
1 teaspoon baking powder
100g Dried Cranberries
100g White Chocolate Chips
100g Shelled Pistachio Nuts
50g frozen raspberries
Directions

You will need:
1 x 13.6 x 11 inch roaster tin

INGREDIENTS

      • 240g butter, softened
      • 150g caster sugar
      • 50g Golden Syrup
      • 100g light brown sugar
      • 2 eggs
      • Zest of 1 orange
      • 260g plain flour
      • 1 teaspoon baking powder
      • 100g Dried Cranberries
      • 100g White Chocolate Chips
      • 100g Shelled Pistachio Nuts
      • 50g frozen raspberries

 

METHOD

      1. Preheat the oven to 180ºC / 160ºC fan and grease and line the baking tin.
      2. Melt the butter, caster sugar, golden syrup and light brown sugar together in a large bowl set over a bain-marie. Once fully melted, remove the bowl from the heat and set aside to cool for 10 minutes.
      3. Add the egg and orange zest and combine thoroughly. Fold in flour, baking powder and salt then finally stir in most of the dried cranberries, white chocolate chips and pistachios.
      4. Spoon the mixture into the prepared tin and sprinkle over the remaining cranberries, white chocolate chips and pistachios then scatter over the frozen raspberries. Bake in the oven for 35 - 40 minutes. The blondies may look a bit under baked when you take them out of the oven but they will set further on cooling.
