Veggie Loaded French Toast

Ingredients
3 eggs
Large handful spinach
Half red pepper
1 banana
3 slices of Dunnes Stores 7 Seeds Bread
Olive oil
Greek yogurt
Smooth Peanut butter
Handful fresh strawberries
Handful fresh raspberries
Crushed walnuts (for adults only)
Drizzle maple syrup (for adults only)
Directions

INGREDIENTS

  • 3 eggs
  • Large handful spinach
  • Half red pepper
  • 1 banana
  • 3 slices of Dunnes Stores 7 Seeds Bread
  • Olive oil

To serve:

  • Greek yogurt
  • Smooth Peanut butter
  • Handful fresh strawberries
  • Handful fresh raspberries
  • Crushed walnuts (for adults only - if you want to serve to your baby these need to be ground)
  • Drizzle maple syrup (for adultsonly and optional)

METHOD

  1. Add the eggs, spinach, red pepper and banana to a blender and blend until fully smooth, then pour into a bowl.
  2. Drizzle a little olive oil onto a non stick pan over a medium heat, then take a slice of bread and dip in the egg mixture. Add to the pan and fry until both side are golden.
  3. For babies - Cut into fingers. Serve with a drizzle of smooth peanut butter. Greek yogurt on a preloaded spoon and a side of berries quartered.
  4. For adults - serve with about 125ml of Greek yogurt, a drizzle of peanut butter, a handful of both strawberries and raspberries. Then sprinkle over crushed walnuts and a little drizzle of maple syrup which is optional.
