Spicy Flatbread Omelette

Ingredients
1 garlic clove, finely sliced
150g cheddar cheese, grated
2 large eggs
1 flatbread
25g butter
Sriracha sauce, to drizzle
Small handful basil leaves
Black bean rayu, to serve
Sea salt

- 1 garlic clove, finely sliced
- 150g cheddar cheese, grated
- 2 large eggs
- 1 flatbread
- 25g butter
- Sriracha sauce, to drizzle
- Small handful basil leaves
- Black bean rayu, to serve
- Sea salt
METHOD
- Add the eggs to a bowl with a pinch of salt, whisk together using a fork and set aside.
- Lightly toast the flatbread over a naked flame or on a griddle pan.
- In a large non-stick frying pan over a medium heat, add the butter. Once the butter starts to foam, add the garlic. Fry for a minute before pouring in the egg. Allow the egg to spread out and reach all sides of the pan. Before the egg sets, add in half the cheese and place a flat bread on top.
- Cook for a further minute before flipping and adding the remaining cheese with a drizzle of sriracha sauce and a few basil leaves.
- Take off the heat and serve with black bean rayu to your taste.
