Ingredients
100g of muscovado sugar
150g of butter
1 large free range egg
350g of plain flour
1 tsp of baking powder
A pinch of salt
1 tbsp of mixed spice
1 tsp of vanilla extract
1 pack of foxes fruits or jolly ranchers
Directions

INGREDIENTS

  • 100g Muscovado Sugar
  • 150g Butter
  • 1 Large Free-Range Egg
  • 350g Plain Flour
  • 1 Tsp Baking Powder
  • A Pinch of Salt
  • 1 Tbsp Mixed Spice
  • 1 Tsp Vanilla Extract
  • 1 Pack of Foxes Fruits or Jolly Ranchers

METHOD

  1. Preheat the oven to 180°C / fan 160°C / Gas Mark 4 and line a baking tray with parchment paper.
  2. In a stand mixer, beat together the butter and sugar until light and fluffy. Add in the egg and mix well.
  3. Stir in the flour, baking powder, salt, mixed spice and vanilla extract until a biscuit dough forms.
  4. Turn the dough onto a floured surface and roll out to about 1cm thick.
  5. Cut out biscuit shapes and place them on the lined tray. Using a smaller cutter or knife, cut out the centre of each cookie.
  6. Crush the sweets with a rolling pin (not too fine) and place the pieces into the centre of each cookie. Bake for 15 minutes.
  7. As soon as they come out of the oven, use a straw or piping nozzle to poke a small hole at the top of each cookie. Allow to cool fully on a wire rack.
  8. Thread through ribbon and hang your festive cookies on the Christmas tree.
