Rhubarb Syllabub

Ingredients
400g Rhubarb, 1 inch chunks
½ vanilla pod
75g sugar
75ml white wine
100g mascarpone
300ml double cream
50g icing sugar
30g pistachios

- 400g Rhubarb, 1 inch chunks
- ½ vanilla pod
- 75g sugar
- 75ml white wine
- 100g mascarpone
- 300ml double cream
- 50g icing sugar
- 30g pistachios
METHOD
- Place a saucepan over a medium heat and cook the rhubarb, vanilla sugar and wine together. Allow to bubble for 5 minutes and set aside to cool completely.
- Whisk the mascarpone, cream and sugar together.
- In glasses, layer the rhubarb and cream mixture and top with pistachios.
