Ingredients
400g Rhubarb, 1 inch chunks
½ vanilla pod
75g sugar
75ml white wine
100g mascarpone
300ml double cream
50g icing sugar
30g pistachios

  • 400g Rhubarb, 1 inch chunks
  • ½ vanilla pod
  • 75g sugar
  • 75ml white wine
  • 100g mascarpone
  • 300ml double cream
  • 50g icing sugar
  • 30g pistachios

 

METHOD

  1. Place a saucepan over a medium heat and cook the rhubarb, vanilla sugar and wine together. Allow to bubble for 5 minutes and set aside to cool completely.
  2. Whisk the mascarpone, cream and sugar together.
  3. In glasses, layer the rhubarb and cream mixture and top with pistachios.
