Mini Baby Christmas Sambos

Ingredients
1 sourdough bread roll (sliced)
1 x chia soft bap (cut in half then into fingers)
Drizzle of olive oil for the bread and 2 tbsp for the cheese mix
2 punnets of cherry tomatoes
3 cloves garlic (skin on)
Zest 1 x lemon and juice 1/2 lemon
Pepper to season
250g soft goat cheese
Handful fresh basil leaves
Greek yogurt
Directions
INGREDIENTS
- 1 sourdough bread roll (sliced)
- 1 x chia soft bap (cut in half then into fingers)
- Drizzle of olive oil for the bread and 2 tbsp for the cheese mix
- 2 punnets of cherry tomatoes
- 3 cloves garlic (skin on)
- Zest 1 x lemon and juice 1/2 lemon
- Pepper to season
- 250g soft goat cheese
- Handful fresh basil leaves
- Greek yogurt
METHOD
- Preheat oven to 180ºC/350ºF.
- Add the cherry tomatoes to a baking dish, drizzle over olive oil, then add the garlic leaving the skin on. Grate over a little lemon zest and season with black pepper. Bake for 15 minutes until the tomatoes have turned lovely and soft. When there is 5 minutes left, add the bread slices to a baking tray, then drizzle over a little olive oil, then add to the oven they turn golden.
- Meanwhile, add the goat cheese, olive oil, lemon juice, roasted garlic (which you take from the tomato tray, just remove the skin) and basil leaves to a blender and blend until smooth and creamy.
- Serve the bread slices on a serving dish, top with the creamy sauce and the soft cherry tomatoes.
For your baby: Serve the softly toasted chia bap, with the sauce and tomatoes. I also added a pre-loaded spoon of greek yogurt and a little goat cheese.
