Ingredients
1 pack pre-rolled puff pastry
125g Dunnes Stores soft goat's cheese
2 tbsp caramelised onion
2 tbsp cranberry sauce
1 sprig fresh rosemary finely chopped and extra to decorate
Egg wash
Fresh raspberries to serve

INGREDIENTS

  • 1 pack pre-rolled puff pastry
  • 125g Dunnes Stores soft goat's cheese
  • 2 tbsp caramelised onion
  • 2 tbsp cranberry sauce
  • 1 sprig fresh rosemary finely chopped and extra to decorate
  • Egg wash
  • Fresh raspberries to serve

METHOD

  1. Pre-heat oven to 220ºC.
  2. Cut the pastry into mini triangles, place around a ramekin bowl. Add a slice of goat cheese to each triangle, then a dollop of caramelised onion and cranberry sauce. Sprinkle over a little rosemary then wrap the pastry around each one.
  3. Cover with cling film and freeze if you are making ahead.
  4. Brush over a little egg wash, then bake for 15-20 minutes or until the pastry is golden brown.
  5. Add the ramekin back into the centre and fill with raspberries, then sprinkle a few raspberries and chopped rosemary on the wreath to decorate.
