Christmas Leftovers Toastie

Ingredients
8 slices Dunnes Stores sourdough bread
6 tbsps Dunnes Stores mayonnaise
6 tbsps Dijon mustard
300g leftover carved turkey breast or leg meat
4 - 8 slices leftover Christmas ham
Sea salt
Freshly ground black pepper
1 bunch spring onions, thinly sliced
200g Dunnes Stores brie, thickly sliced
6 tbsps Dunnes Stores cranberry sauce
1 tbsp olive oil
50g butter

INGREDIENTS
- 8 slices Dunnes Stores sourdough bread
- 6 tbsps Dunnes Stores mayonnaise
- 6 tbsps Dijon mustard
- 300g leftover carved turkey breast or leg meat
- 4 - 8 slices leftover Christmas ham
- Sea salt & freshly ground black pepper
- 1 bunch spring onions, thinly sliced
- 200g Dunnes Stores brie, thickly sliced
- 6 tbsps Dunnes Stores cranberry sauce
- 1 tbsp olive oil
- 50g butter
METHOD
- Spread one side of each slice of bread with the mayonnaise and then place, mayonnaise side down on a chopping board. Spread 4 slices with the Dijon mustard then divide the leftover turkey and ham between these slices. Sprinkle over the spring onions and place the brie slices on top.
- Add cranberry sauce to the 4 remaining slices then sandwich together to make 4 toasties.
- Add the oil and butter to a large frying pan and place over a medium - low heat. Fry 2 sandwiches at a time - cooking for 4 - 5 minutes until the bread is golden then flip and cook on the other side until the bread is golden and the brie is melty.
- Serve straight away with extra cranberry sauce on the side for dipping.
