1 bunch spring onions, roots trimmed
Olive oil
100g Dunnes Stores feta cheese
3 tbsp Dunnes Stores Greek style natural yogurt
Zest of a lemon
40g butter
½ tsp Dunnes Stores chilli flakes
Directions

  • Olive oil
  • 100g Dunnes Stores feta cheese
  • 3 tbsp Dunnes Stores Greek style natural yogurt
  • Zest of a lemon
  • 40g butter
  • ½ tsp Dunnes Stores chilli flakes

METHOD

  1. Drizzle the spring onions with olive oil and place them in a hot cast iron pan or directly over a barbecue grill. Cook until the outsides are blistered and slightly blackened, and the insides are tender — turning occasionally to ensure even charring. This should take about 5–6 minutes total.
  2. While the onions cook, add the feta, Greek yogurt, and zest of half a lemon to a food processor. Blitz until the mixture becomes smooth, light, and airy — it should have a creamy, spreadable texture. Taste and adjust with a pinch of salt if needed.
  3. In a small saucepan, melt the butter over medium heat. Let it bubble and foam, swirling occasionally, until it turns a deep golden colour and smells rich and nutty — this takes just a few minutes. Keep a close eye on it, as it can burn quickly once it starts browning.
  4. Spoon the whipped feta onto a serving plate, creating swoops with the back of a spoon. Arrange the charred spring onions on top. Drizzle generously with the burnt butter, letting it pool around the feta. Finish with a pinch of chilli flakes for heat, and serve immediately.
