Ingredients
250g Dunnes Stores Mascarpone
250g Dunnes Stores Caramelised Biscuits, plus extra for serving
200ml double cream
2 tbsp icing sugar
1 tsp vanilla extract
150ml strong coffee, cooled
Splash of coffee liqueur, Kahlua, Vin Santo or Marsala
Cocoa powder, to serve
Directions

INGREDIENTS

  • 250g Dunnes Stores Mascarpone
  • 250g Dunnes Stores Caramelised Biscuits, plus extra for serving
  • 200ml Double Cream
  • 2 Tbsp Icing Sugar
  • 1 Tsp Vanilla Extract
  • 150ml Strong Coffee, cooled
  • Splash of Coffee Liqueur (Kahlua, Vin Santo or Marsala)
  • Cocoa Powder, to serve

METHOD

  1. In a bowl, beat together the mascarpone, icing sugar, vanilla, double cream, and coffee liqueur until smooth and softly whipped.
  2. Quickly dunk each caramelised biscuit into the cooled coffee for 1–2 seconds, making sure not to let them go soggy.
  3. In a tray, layer the coffee-soaked biscuits with spoonfuls of the mascarpone mixture, repeating until the tray is filled.
  4. Finish by dusting with cocoa powder and crumbling some extra biscuits over the top.
  5. Serve straight away, or chill in the fridge for 1 hour to allow the flavours to meld beautifully.
