Berry Crumble Overnight Oats

Ingredients
Plain flour 2 tbsp
Oats 1/4 cup or 4 tbsp
Olive oil 3 tbsp
Ground cinnamon 1/2 tsp
Maple syrup 1 tsp
Bag frozen mixed berries
1 Lemon
Ground flaxseeds 1/4 cup or 4 tbsp
Milled Chia 1/4 cup or 4 tbsp
2 Pears
Greek style yogurt 1 tub
Yogurt kefir drink 1 carton
Milk 1 cup

INGREDIENTS
Crumble
- 2 tbsp plain flour
- 1/4 cup (4 tbsp) oats
- 3 tbsp olive oil
- 1/2 tsp ground cinnamon
- 1 tsp maple syrup (optional)
Berry Base
- 1 bag frozen mixed berries
- 2 tbsp water
- Zest and juice 1 lemon
Overnight Oats
- 3 cups oats
- 1/4 cup (4 tbsp) ground flaxseeds
- 1/4 cup (4 tbsp) milled chia
- 2 soft ripe pears, chopped and mashed
- 1 tub Greek style yogurt
- 1 carton yogurt kefir drink
- 1 cup milk
METHOD
- Add all of the crumble ingredients to a small oven-proof dish and stir well. Press down, then airfry for 8 minutes. Leave to cool fully, then use a fork to break apart into a crumble.
- Place the berries and water into a bowl along with the lemon zest. Microwave for 2 minutes, then stir in the juice of 1/2 the lemon and leave aside.
- In a large bowl, mix together the overnight oat mixture and stir well.
- To assemble the jars, divide the berry mixture between 6 jars. Next, fill each jar about 3/4 full with the oat and seed mixture, then top each one with the crumble.
- Leave in the fridge overnight. For children, serve half the jar.
