Grape Variety - Chardonnay
History - This Chardonnay is planted on limestone marl, which maintains a balance between heat and humidity so that the vines produce grapes with a good level of acidity.
Pale yellow colour with golden hues. The nose offers vibrant aromas of ripe pear, white peach followed by light vanilla and toasted buns notes. Rich on the palate with a good acidity, the finish is long and elegant, with notes of ripe fruit and a hint of toasted hazelnut.
Producer - Le Cellier d'Eole
Regional Information - The Languedoc region is the cradle of winegrowing in France, and owes the introduction of vines to the Greeks and wine-making techniques to the Romans. Its history makes it the oldest and largest region in France.
Set between sea and mountains, the Pays d'Oc enjoys a warm, sunny Mediterranean climate. The region also boasts a diversity of soils, enabling the production of a wide variety of wines with unique characteristics.
Vinification Details - The grapes are harvested early in the season during the cool, early morning hours. The pressing is very gentle, in a pneumatic press.
Fermentation and ageing are done in concrete tank with a temperature controlled between 16°C to 18°C.
40% of the wine ferments under the influence of French oak, with temperature control. The wine is aged during 5 months on its fine lees with regular stirring before bottling.
