History - This specific Cabernet Sauvignon comes from terroirs stretching all the way along the piedmont of the Black Mountain. This warm and dry Mediterranean climate is tempered by refreshing breezes from the mountains. The vines are planted on well exposed stony terraces made of sandstone and limestone sub-soil. Cabernets from this area are concentrated, complex and characterised by aromas of ripe fruit.
Producer - Le Cellier d'Eole
Regional Information - The Pays d'Oc takes full advantage of its Mediterranean climate. With its coastline bordering the region in the South, it provides hot and dry summers for perfect maturity. On the other side, the Black Mountain brings enough humidity and cool temperatures for the vineyards to produce grapes packed full with fruity aromas.
Vinification Details - The grapes are harvested and fermented separately and are destemmed and crushed as soon as they reach the cellar. Maceration lasts about 15 days at a temperature of 26/28° C in concrete tanks. During this process, winemakers regularly pump-over the juice to enhance the extraction of tannins, colour and fruity aromas. Then, 30% of the wine is aged using medium-toasted French oak for 5 months, adding complexity to the resulting wine.
