Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow the meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little olive oil and season with sea salt and cracked black pepper.
180°C, Fan 160°C, Gas 4
Medium: 18-20 minutes
Well done: 20-25minutes
- Preheat oven.
- While the oven is heating up preheat an oven proof pan over a high heat.
- Place the lamb, fat side down, into the pan and sear for 2 minutes.
- Turn the lamb and add a generous amount of butter and baste.
- Transfer the pan with the meat to the middle shelf of the oven and cook for times indicated. Remove from the oven and transfer the meat to a chopping board.
Caution: Take care when removing from the oven as the handle of the pan will be extremely hot.
Preparation and Usage
Serving Suggestion
Allow to rest for 5 minutes.
For best results, slice across the narrow side of the lamb and pour over the juices that remain in the pan. Do not reheat.
