- If freezing, freeze on the day of purchase and consume within 1 month.
- Defrost thoroughly in refrigerator before cooking and consume within 24 hours.
- Once thawed do not refreeze.

Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and the sprig of rosemary and allow meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little olive oil and season with sea salt and cracked black pepper and place the rosemary back onto the surface of the lamb.
150°C, Fan 130°C, Gas 2 90 mins.
Slow Roast: Preheat oven. Sear the lamb all over on a dry, hot frying pan. Transfer the lamb to a roasting tray, place on the middle shelf of the oven and cook for time indicated.
Allow joint to rest for 10 minutes before carving. Carve thinly using a sharp knife. Do not reheat.
