Healthy Sweet Potato Cottage Pie

Ingredients
2 tablespoons olive oil
750g bag sweet potatoes, peeled and cut into 4cm chunks
2 medium sized carrots, peeled and diced
150g Dunnes Stores frozen diced onion
300g Dunnes Stores lean beef mince
39g pack Dunnes Stores savoury mince mix
150g Dunnes Stores frozen petit pois
100g Dunnes Stores My Family Favourites grated cheddar and mozzarella
Salt
Freshly ground black pepper
Directions
INGREDIENTS
- 2 tablespoons olive oil
- 750g bag sweet potatoes, peeled and cut into 4cm chunks
- 2 medium sized carrots, peeled and diced
- 150g Dunnes Stores frozen diced onion
- 300g Dunnes Stores lean beef mince
- 39g pack Dunnes Stores savoury mince mix
- 150g Dunnes Stores frozen petit pois
- 100g Dunnes Stores My Family Favourites grated cheddar and mozzarella
- Salt
- Freshly ground black pepper
METHOD
- Preheat the oven to 180°C/160° fan.
- Place the sweet potato into a pot of cold water with a big pinch of salt. Put the lid on the pot and place on a high heat. Bring to the boil and then reduce to a simmer for 20 minutes or until the potato is soft enough to mash. Drain well and place back into the pot.
- Add one tablespoon of olive oil and some salt and pepper and mash.
- Meanwhile, heat the other tablespoon of olive oil in a frying pan.
- Add the carrots and onion and cook over a medium heat for 5-6 minutes until the vegetables are beginning to soften.
- Push the vegetables to the side and add in the mince.
- Break down the mince with a wooden spoon or spatula cook for 8-9 minutes until browned.
- Meanwhile mix the savoury mince mix with 425ml of cold water and add to the mince and simmer for 5 minutes.
- Stir in the frozen peas and season well with salt and pepper.
- Place the mince mix into an oven proof dish. Top with the mashed sweet potato, sprinkle with the cheese and place in the pre-heated oven for 20-25 minutes.
- Remove and serve.
