Remove all packaging and the sprig of rosemary and allow meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little olive oil and season with sea salt and cracked black pepper and place the rosemary back onto the surface of the lamb.<br/> 150°C, Fan 130°C, Gas 2 90 mins.<br/> Slow Roast: Preheat oven. Sear the lamb all over on a dry, hot frying pan. Transfer the lamb to a roasting tray, place on the middle shelf of the oven and cook for time indicated.<br/> Allow joint to rest for 10 minutes before carving. Carve thinly using a sharp knife.
