Sun Blush Pasta Pesto

Ingredients
500g fresh pasta
120g (1/2 cup) sun blush tomatoes
2 cloves garlic
45g (1/3 cup) pumpkin seeds
1 tsp Italian style herbs
Drizzle olive oil
Small handful grated Parmesan cheese (for older children)
Fresh basil leaves

- 500g fresh pasta
- 120g (1/2 cup) sun blush tomatoes
- 2 cloves garlic
- 45g (1/3 cup) pumpkin seeds
- 1 tsp Italian style herbs
To serve:
- Drizzle olive oil
- Small handful grated Parmesan cheese (for older children)
- Fresh basil leaves
METHOD
- Cook the pasta as per the pack instructions. Fresh pasta cooks in 5 minutes. Drain but reserve 1/2 cup pasta water for the sauce.
- Add the tomatoes, garlic, pumpkin seeds, fresh herbs and the reserved pasta water to a blender and blend until smooth and silky.
- Pour the sauce into a pan and stir for about 5 minute so the garlic cooks, then add the pasta and stir until fully coated.
- To serve, drizzle over a little olive oil, add a sprinkle of parmesan cheese (leave out for babies) and decorate with freshly torn basil leaves.
