Neven Maguire's Hoisin Chicken Rice Bake

Ingredients
3 Simply Better Irish Corn Fed Chicken Breast Fillets, diced
3 Tbsp. Simply Better Irish Made Hoisin Sauce plus extra to serve
1 Tbsp. Simply Better Irish Made Soy & Ginger Sauce
1 Tbsp. Simply Better Cold Pressed Irish Rapeseed Oil
25g Butter
1 Onion, thinly sliced
1 Pack Simply Better Irish Made Free Range Chicken Stock
250g Simply Better Organic Brown Basmati Rice, rinsed
1 Pack Simply Better Asian Style Greens
Directions
INGREDIENTS
- 3 Simply Better Irish Corn Fed Chicken Breast Fillets, diced
- 3 Tbsp. Simply Better Irish Made Hoisin Sauce plus extra to serve
- 1 Tbsp. Simply Better Irish Made Soy & Ginger Sauce
- 1 Tbsp. Simply Better Cold Pressed Irish Rapeseed Oil
- 25g Butter
- 1 Onion, thinly sliced
- 1 Pack Simply Better Irish Made Free Range Chicken Stock
- 250g Simply Better Organic Brown Basmati Rice, rinsed
- 1 Pack Simply Better Asian Style Greens
DIRECTIONS
- Put the chicken in a bowl and stir in the hoisin and soy and ginger sauce. Heat a shallow casserole or skillet over a high heat. Add the oil and butter. Once foaming, tip in the onion and chicken and sauté for about 5 minutes until golden brown.
- Pour the stock into the pan, scraping any sediment from the bottom of the pan, then stir in the rice. Bring to a simmer and then put on the lid. Reduce the heat to low and simmer gently for 40 minutes until the rice is almost tender and the stock has all been absorbed.
- Remove the lid and quickly scatter over the Asian style greens. Cook for another 5 minutes until the greens have steamed. Remove from the heat and sprinkle over the dressing from the greens. Gently fold everything together to combine then divide among bowls and add a little extra hoisin sauce to serve.
