Ingredients
1 Tbsp Simply Better Toscano IGP Extra Virgin Olive Oil
2 Simply Better Irish Corn Fed Chicken Fillets, cut into bite-sized pieces
1 Tsp. Simply Better Expertly Blended Sriracha Seasoning
1 Large Onion, diced
1 Simply Better Spanish Lamuyo Pepper, thinly sliced
2 Garlic Cloves, crushed
1 Simply Better Spanish Chorizo iberico sliced
1 Tbsp. Simply Better Expertly Blended Poultry Seasoning
250g Simply Better Organic Basmati Rice, well rinsed
1 Tin Simply Better Italian Chopped Tomatoes
350ml Simply Better Free Range Chicken Stock
Simply Better Achill Sea Salt
Freshly Ground Cracked Black Pepper
Simply Better Sicilian Lemon Steamed Greens, to serve
Directions
INGREDIENTS
- 1 Tbsp Simply Better Toscano IGP Extra Virgin Olive Oil
- 2 Simply Better Irish Corn Fed Chicken Fillets, cut into bite-sized pieces
- 1 tsp Simply Better Expertly Blended Sriracha Seasoning
- 1 large onion, diced
- 1 Simply Better Spanish Lamuyo Pepper, thinly sliced
- 2 garlic cloves, crushed
- 1 Simply Better Spanish Chorizo iberico, sliced
- 1 Tbsp Simply Better Expertly Blended Poultry Seasoning
- 250g Simply Better Organic Basmati Rice, well rinsed
- 1 tin Simply Better Italian Chopped Tomatoes
- 350ml Simply Better Free Range Chicken Stock
- Simply Better Achill Island Sea Salt & freshly ground black pepper
- Simply Better Sicilian Lemon Steamed Greens, to serve
METHOD
- Heat the oil in a large non-stick frying pan or skillet with a lid over a medium-high heat. Add the chicken to the pan and sprinkle over the sriracha seasoning. Sauté for 4-5 minutes until golden brown but not cooked through. Transfer to a plate with a slotted spoon.
- Add the onion and pepper to the pan and sauté for 3-4 minutes until softened. Stir in the garlic and chorizo and then sprinkle over the poultry seasoning. Sauté for another couple of minutes until softened and catching a bit of colour.
- Stir the rice into the pan and cook for 1 minute, stirring. Add the tomatoes and stock and then add back in the chicken. Season to taste and cover with a lid. Simmer for 20 minutes, moving the pan around so that it doesn’t catch on the bottom. Turn of the heat and then leave undisturbed for another 10 minutes. Serve straight to the table with a bowl of the greens.
