The conditions ensured healthy, clean vine canopies and fruit packed with flavour and intensity across all varieties. With the warm weather conditions, harvest started slightly early this year.<br/>Vinification Details - Carefully selected parcels of Sauvignon Blanc from our Awatere and Wairau Valley vineyards were used to craft this wine. The fruit was harvested over a period of eighteen days. At the winery, the fruit was destemmed and gently pressed. The juice was cold settled for 72 hours, after which the clear juice was racked o_ , followed by a long cool fermentation in stainless steel to capture and enhance the fruit flavours. Each of the individual parcels were fermented separately using a range of selected yeasts to enhance varietal characters. A selection of vineyards planted on silty soils with excellent drainage at the foot of the Andes is carefully combined with vineyards close to the Coastal Mountains, where the soils are heavier and include a combination of silt and clay.<br/>Vinification Details - The grapes were hand-picked in April and May, destemmed, crushed, and submitted to a 5-day cold soak to achieve maximum color extraction while avoiding excessive extraction of tannins. Fermentation took place at 24o-28oC, depending on the lot and zone. 10% oak was used during fermentation to increase color set and stability in the wines. Modern viticultural &amp; winemaking techniques mean that the climate can be seen as one of the region&#x27;s strengths.<br/>Vinification Details - The fruit was crushed and de-stemmed to varying sizes &amp; styles of red fermenters where the fruit was fermented on oak at cooler temperatures of 18 - 22oC for 5 - 7 days. Fermenting at cooler temperatures allows the fruit flavours to be nurtured and enables retention of varietal characteristics.
