Ingredients
1 cup pumpkin purée (roast pumpkin and blitz)
1 cup oats
1 cup desiccated coconut
90g or 1/3 cup smooth peanut butter
1 tbsp maple syrup
1/4 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 tbsp coconut oil
1 bar good quality raw chocolate
Directions

INGREDIENTS

  • 1 cup pumpkin purée (roast pumpkin and blitz)
  • 1 cup oats
  • 1 cup desiccated coconut
  • 90g or 1/3 cup smooth peanut butter
  • 1 tbsp maple syrup
  • 1/4 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tbsp coconut oil
  • 1 bar good quality raw chocolate

METHOD

  1. Add all of the ingredients with the exception of the chocolate to a food processor and process until it starts to come together.
  2. Pour the mixture into a bowl and leave in the fridge for about 1 hour to allow it to thicken slightly.
  3. Remove from the fridge, and roll into bite sized balls, then return to the fridge.
  4. Heat the chocolate in a bowl over some warm water until it melts, then dip each of the balls into the chocolate and return to the fridge to set fully.
