Baby Led Weaning Broccoli and Cauliflower Nuggets

Ingredients
1/2 head broccoli (roughly 120g) steamed
1/2 head cauliflower (roughly 120g) cauliflower steamed
90g oats (ground into oat flour)
1 tsp garlic powder
2 eggs
1 handful of mild cheddar cheese
Light drizzle olive oil

Makes 32 mini nuggets

 

INGREDIENTS

  • 1/2 head broccoli (roughly 120g) steamed
  • 1/2 head cauliflower (roughly 120g) cauliflower steamed
  • 90g oats (ground into oat flour)
  • 1 tsp garlic powder
  • 2 eggs
  • 1 handful of mild cheddar cheese
  • Light drizzle olive oil

 

METHOD

  1. Preheat oven to 180ºC.
  2. Finely chop the broccoli and cauliflower until it resembles rice. You can do this with a knife or quickly using a food processor.
  3. Add to a large mixing bowl along with the oat flour, garlic powder, eggs and cheese, then stir well until fully combined.
  4. Use a small ice cream scoop or tablespoon measure to divide the mixture onto a lightly oiled tray lined with parchment paper.
  5. Bake for 15-20 minutes until the nuggets are golden around the edges and set fully.
  6. Serve warm or cold.
