Regional Information - Germany's Mosel Valley is as far north as grapes will grow and in this cool climate, steep slopes (Steillage) and their angle to the sun helps the grapes to ripen. The slate soils also play an important role in that they absorb the heat of the day and give it back to the vines at night, thereby aiding ripening. Due to the steepness of the slopes, all the work in the vineyards, including the harvest, has to be done by hand.
Vinification Details - The grapes are picked by hand in late September and gently pressed before a long, cool fermentation with selected yeasts in stainless steel for up to three weeks. The wine remains on the fine lees without stirring for a further 4-5 months to gain additional weight and structure.
