Preparation and Usage
Create
Apricot, Pomegranate & Pistachio Couscous
Chop 1 small red onion & place in a bowl with 30g of fresh lemon juice. Toast 100g of shelled pistachios in a small pan until lightly browned & leave to cool. Put 200g of couscous in a heatproof bowl, add 250g of water, 2 tbsps of extra virgin olive oil, 1 tsp of sea salt & mix. Cover & rest for 5 mins. Fluff the couscous with a fork & mix in 2 tsps of harissa paste, the onion, lemon juice, toasted pistachios. 100g of fresh pomegranate seeds & 100g of chopped Forest Feast Soft Apricots. Serve warm
