Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow the meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little olive oil and season with sea salt and cracked black pepper.
190°C, 170°C, Gas 5
Rare - 15mins per 500g + 20mins. Extra
Medium - 15mins. per 500g + 20mins. Extra
Well Done - 25mins per 500g + 20mins. Extra
Preheat oven. Sear the joint all over on a dry, hot frying pan. Transfer the joint to a roasting tray, place on the middle shelf of the oven and cook for times indicated.
Allow the joint to rest for 10 minutes before carving. Carve thinly using a sharp knife. Do not reheat.
