Winemaking:
All the grapes are harvested at night when the temperatures are low to avoid oxidation. Then, they undergo a modern winemaking process. After a 24-hour skin contact maceration, at 6°C, only the premium juices are selected. Marilyn chose to assemble the freshness of Sauvignon (60%), the powerful aromas of Colombard (20%) and the complexity of Gros Manseng (20%) to create a wine with a long and silky finish. The juices ferment at a low temperature. The intense fruit aromas come from the specific method used to extract all of the fruity flavors from the big lees. During 20 days they are kept at a 0-2°C temperature, before they are filtered again for fermentation. The resulting wine is matured on its fine lees until bottling.

The landscapes of Gascony spread from the Atlantic Ocean to the Pyrenees, providing fascinating Terroirs. Southern French sun-kissed days promote ripe grapes packed full of sunshine. On the other hand, the Atlantic brings chilly ocean breezes and cool nights which improves the lovely fruity aromas. The clay and sand soils store water during the rainy spring which is then released when the vines grow, enabling them to get through the dry summers.
