Ingredients
1 tablespoon olive oil
125g Dunnes Stores frozen diced onion
8 Dunnes Stores pork sausages, skin removed
2 peppers, sliced
460g jar of Dunnes Stores Bolognese sauce
1 ball Dunnes Stores My Family Favourite Mozzarella
Salt
Freshly ground black pepper
300g Dunnes Stores fusilli pasta
Fresh basil leaves to garnish (optional)
Directions

INGREDIENTS

  • 1 tablespoon olive oil
  • 125g Dunnes Stores frozen diced onion
  • 8 Dunnes Stores pork sausages, skin removed
  • 2 peppers, sliced
  • 460g jar of Dunnes Stores Bolognese sauce
  • 1 ball Dunnes Stores My Family Favourite Mozzarella
  • Salt
  • Freshly ground black pepper
  • 300g Dunnes Stores fusilli pasta
  • Fresh basil leaves to garnish (optional)

METHOD

  1. Heat the oil in a large frying pan or wok over a high heat.
  2. Add the diced onion with a big pinch of salt and fry for 4-5 minutes until the onion is soft but not coloured.
  3. Add the sausage to the pan and use the back of a wooden spoon to break into smallish chunks.
  4. Continue to cook for another 4 - 5 minutes, stirring frequently.
  5. Add the peppers to the pan and fry for 4-5 more minutes.
  6. Pour in the jar of sauce plus 100ml boiling water and season with salt and pepper.
  7. Bring back to the boil. Then drop to a simmer for 5-7 minutes.
  8. Meanwhile, cook the pasta in a pot of boiling water with a pinch of salt for 9 to 11 minutes. Then drain.
  9. Add the pasta into the frying pan and stir everything together. Tear the ball of mozzarella over the top. Taste for seasoning and serve garnished with fresh basil leaves if using.
