Ingredients
180g (3/4 cup) mashed sweet potato
180g (3/4 cup) mashed carrot
1 tsp finely chopped rosemary
1 egg
3 tbsp Greek yogurt
1 tsp garlic granules
90g (1/2 cup) oat flour (plus a little extra for dusting the plate)
3 tbsp olive oil
Directions

INGREDIENTS

  • 180g (3/4 cup) mashed sweet potato
  • 180g (3/4 cup) mashed carrot
  • 1 tsp finely chopped rosemary
  • 1 egg
  • 3 tbsp Greek yogurt
  • 1 tsp garlic granules
  • 90g (1/2 cup) oat flour (plus a little extra for dusting the plate)
  • 3 tbsp olive oil

DIRECTIONS

  1. Add all of the ingredients to a large mixing bowl and stir well until fully combined.
  2. Sprinkle a little extra oat flour on a plate, then divide the mixture using a tablespoon. This helps them to not stick.
  3. Place into the airfryer and cook for 12 minutes at 180ºC until golden and cooked through. Or place on a baking tray lined with parchment and bake for 20-25 minutes until golden.
  4. Serve with a sauce of your choice and a little sprinkle of fresh parsley.

*Note: if you don’t have an airfryer, preheat oven to 180ºC.
