Airfryer Sweet Potato & Carrot Bites

Ingredients
180g (3/4 cup) mashed sweet potato
180g (3/4 cup) mashed carrot
1 tsp finely chopped rosemary
1 egg
3 tbsp Greek yogurt
1 tsp garlic granules
90g (1/2 cup) oat flour (plus a little extra for dusting the plate)
3 tbsp olive oil

INGREDIENTS
- 180g (3/4 cup) mashed sweet potato
- 180g (3/4 cup) mashed carrot
- 1 tsp finely chopped rosemary
- 1 egg
- 3 tbsp Greek yogurt
- 1 tsp garlic granules
- 90g (1/2 cup) oat flour (plus a little extra for dusting the plate)
- 3 tbsp olive oil
DIRECTIONS
- Add all of the ingredients to a large mixing bowl and stir well until fully combined.
- Sprinkle a little extra oat flour on a plate, then divide the mixture using a tablespoon. This helps them to not stick.
- Place into the airfryer and cook for 12 minutes at 180ºC until golden and cooked through. Or place on a baking tray lined with parchment and bake for 20-25 minutes until golden.
- Serve with a sauce of your choice and a little sprinkle of fresh parsley.
*Note: if you don’t have an airfryer, preheat oven to 180ºC.
