Cooking Guidelines
Shallow Fry - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow pork to come up to room temperature for 10 - 15 minutes before cooking.
Drizzle with a little olive oil and season with sea salt and cracked black pepper just before cooking.
Pan Fry
Preheat a pan over a high heat. Sear the pork on both sides, reduce the heat to medium and cook for time indicated: 6 mins, turning halfway through cooking.
Ensure the medallions are piping hot throughout. Allow to rest for 5 minutes before serving. Do not reheat.
