Charred Baby Gem Wedge Salad

Ingredients
3 baby gem lettuces, halved lengthways
Olive oil, for brushing
3 tbsp mayonnaise
Zest & juice of ½ lemon
1 clove of garlic, grated
6 Dunnes Stores streaky smoked rashers
Dunnes Stores Parmesan cheese, shaved
3 tbsp crispy onions (shop-bought or homemade)
Salt
Freshly ground black pepper
Directions
INGREDIENTS
- 3 baby gem lettuces, halved lengthways
- Olive oil, for brushing
- 3 tbsp mayonnaise
- Zest & juice of ½ lemon
- 1 clove of garlic, grated
- 6 Dunnes Stores streaky smoked rashers
- Dunnes Stores Parmesan cheese, shaved
- 3 tbsp crispy onions (shop-bought or homemade)
- Salt and freshly ground black pepper
METHOD
- To make the Caesar dressing, in a small bowl mix the mayo, grated garlic, lemon zest and juice, and season salt and freshly ground black pepper.
- Slice the rashers into small pieces and fry on a dry pan until crispy. Set aside on kitchen paper until ready to use.
- Heat a griddle pan or barbecue until very hot. Brush the cut sides of the lettuce with olive oil and press them onto the grill for 1–2 minutes, just until they take on some char and soften slightly.
- Transfer to a platter, drizzle with Caesar dressing, scatter with crispy onions, bacon and Parmesan, and finish with a good grind of black pepper.
