Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all outer packaging but leave the strings on while cooking. Drizzle with olive oil and season with sea salt and cracked black pepper.
190°C, Fan 170°C, Gas 5, 1 hr. 25 mins
- Preheat oven.
- Place the joint on a roasting tray on the middle shelf of the oven and cook for the time indicated.
Allow the joint to rest for 10 minutes. Remove strings before carving. Ensure product is piping hot throughout. Do not reheat.

Serving Suggestion
For best results, pat the joint dry, brush with a little oil and rub with plenty of sea salt. This will help the fat to puff up and become crisp.
