Pork is all about provenance. Our fresh pork is 100% Irish reared by native, family farmers. These are artisan producers who take pride in their husbandry and their produce. Many of our farmers care for the quality from seed to serve for firm, pink and perfect quality pork. Our pork sausages are crafted by hand with pork shoulder because it gives a better bite and fuller flavour.
