If freezing, freeze on the day of purchase and consume within 1 month. Defrost thoroughly in refrigerator before cooking and use within 24 hours. Once thawed do not refreeze.

Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little oil and season with salt and freshly ground black pepper.
160°C, Fan 140°C, Gas 3, 2hrs. 30mins.
Preheat oven. Cover the lamb with foil, place on a roasting tray on the middle shelf of the oven and cook for time indicated. Remove the foil for the last 30 minutes of cooking time to brown the skin.
Allow the joint to rest for 10 minutes before carving. Do not reheat.
