Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow the meat to come up to room temperature for 45 minutes before cooking. Drizzle with olive oil and season with sea salt and cracked black pepper.
180°C, Fan 160°C, Gas 4
Rare: 1 hr.
Medium: 1hr. 15mins.
Well done: 1hr. 30mins.
- Preheat oven.
- Sear joint all over on a dry, hot frying pan.
- Transfer the joint to a roasting tray and add a little water.
- Place on the middle shelf of the oven and cook for times indicated
Allow the joint to rest for 15 minutes. Remove strings before carving. Carve thinly using a sharp knife. Do not reheat.

Serving Suggestion
For an even more impressive roast, why not try adding a vegetable trivet. A vegetable trivet is a selection of root vegetables and herbs that will add flavour to your roast and can also be used to make a delicious gravy to go with your final dish.
Method
Wash and peel a selection of root vegetables, for example, carrots, onions and celery. Chop into large pieces and place into a roasting tray. Crush some garlic and add to the tray along with some thyme and rosemary. Mix roughly to create an even layer, place the beef joint on top and roast as per the cooking instructions.
