Cooking Guidelines
Oven cook - From Frozen - Get hands on
Preheat your oven to 220°C (200°C fan) / gas 6
1. Let your filo defrost in it's wrapper until it's soft - usually around 1 hour 45 minutes at room temp, or overnight in the fridge.
2. When you're ready and your pastry has thawed, let it come fully to room temperature. It relaxes, and the sheets separate more easily.
3. Fill, layer or wrap in the shape your recipe takes and bake until golden and crisp.

Filo dries quickly, so keep the sheets under a slightly damp towel to keep them soft and easy to work with.
Top tip
Baking slower and for longer gives you flakier bakes
